V-brakes are a bit of a let down on this, would prefer some discs but frame and fork don't look compatible?

v-brakes are great - many stopping power w/ decent pads. And surprising good in the rain on rough decents fully loaded.

Yeah, I have no problem with V brakes. Easy to set up and service and very decent stopping power. I think your girlfriend saying 'no' could be a bigger issue.
