There should be a system where whoever wants it most pays more money. Each person could offer a certain amount of money and if the other person's "bid" is higher, you get a chance to offer a bit more.
You could keep doing this until a certain time limit and whoever had offered the most money by then "wins" the item.
Am I onto something here?

I had my fixed gear stolen this morning outside the Natural History Museum having put the finishing touches on it a couple of days ago. I don't have any pictures but if anyone sees anything that matches the following description, please post. I've spent so much time/money getting this bike shipshape, can't bear to lose it!
- Frame: Resprayed gloss black 64cm Raleigh Record Sprint with no markings/decals
- Wheels and tyres: White Halo Aerotrack wheels with black and white Schwalbe tyres
- Saddle: White Selle Italia
- Drivetrain: Silver Token crankset with black pedals and footstraps. Black Token chainring.
- Bars/stem: Black quill stem and black bull horn bars with white tape. Right-hand front brake.

You young kids that like to ride gravel and have just discovered steel again? This is for you. Rough city streets? Fuggedaboutit. Rainy commutes or training? Yep. Rack on the back for light touring? That's right son. Easily build it up to an under 19 lb Swiss army knife of bikes. Gunnar was making the 'all-road' bike ages before the theradavist or Rapha started curating epic rides.

it can go very high very fast in the last few minutes.
The trick I use for eBay sales is to wait the last few minutes, evaluate the highest bid and decide for the highest I would pay for the item. Then I'd wait the last 10 seconds or even close to place my bid with the highest I am willing to shelve.
This way the prices don't go high at the beginning which is useless to everyone and I pay, if I win, only the amount I am actually willing to pay.
If I'd bit early during the auction then there's time for someone else to come and bid one more pound over me and eBay would automatically re-bid on top, thus raising the price to my highest way before the auction would end.
I use mybidder. App on Android and iOS and a plugin for Firefox.
Works well and let's you set your max bid and forget about it. I've got some silly deals using it, particularly for poorly listed things or things that end at awkward times. -

C4 Joker, early carbon monocoque frame. Pretty rad and bloody cheap this example (not my size argh)
"alumenum feame" it would appear that attempting to spell aluminium wore his brain out so much that he was unable to spell frame afterwards.
