I shoot sRGB as this is what is being displayed around the net, and this is also what the guys who print my files want.
I think high ISO (like, above 400) on a 1000D looks pretty much shit no matter what.
I enable Lighting Optimizer and find it does better things a bit. Far less effective compared to Nikon D300 for example though.
I does not record "what it thinks you want to see", it just combats blown-out highlights to a degree. Which is a good thing.
I have WB on auto on the 1000D, if it's anything difficult I always use the raw later.
