Unfortunately I hate the ergo shape of the Eubois...
Here it is with a borrowed Cinelli XA/ Cinelli Campione Del Mundo... I agree a quill stem looks better, but in terms of bars I'm after dat flat transition from tops to hoods.
Seatpost / saddle also borrowed, I need a few more cm showing (but for the purpose of the previous discussion about reaming, that's a 27.2mm aero Chorus, and it goes in fine until just past the minimum insertion)
