I would actually listen to his recommendation as he insist on having a classic drop bar with a flat top and campag-style brake levers which ever invaluable, he was very specific on the shape.
Remember, you don't necessary need to buy it directly from him, if he said you need an 80mm stem, you might have one knocking around (you probably do you sly dog).
