Challenge are probably your best bet, being both readily available and affordable.
Their Grifo and Fango tyres are suitable for most conditions, I don't think Challenge even know the difference between them, from dry to wet. They'll struggle in really gloopy mud but that's true of most clinchers and if you are riding in thick mud regularly then it's best to invest in a proper mud tyre, like the Challenge Limus.
