I think this is the finish to go for. Its a nice look, and a popular Serotta finish from the era of your frame.
I think Nitto do that nice grey colour seatpost.
For rims I'd just de-sticker some A23s
For groupset. I'd grab the best shimano group you can get in silver. 105 5700 seems a nice chioce.

Finished with a white saddle, and some white bar tape. I reckon you'd have bloody nice looking bike. Yet with modern componentry.
