Did you mean rooting?

Heimdall or Odin to flash Chainfire's CFRoot kernel (includes Clockworkmod bootloader), then use Clockworkmod to flash whatever you like.

Backup and wipe before flashing a completely new ROM, but I can flash updates to Cyanogenmod without losing anything, just takes a reboot.

Using clockworkmod, clear the cache after flashing ROM updates.
