I'd like to strip the powdercoat, let it rust and hang it on the wall. Any ideas on how to most easily do that? Or should I leave it as is and put it up?
Lots of paint stripper, nitromoros/similar. Leave overnight. Scrape off with a old credit card / similar. IME removing a powder coat is a laborious process.
In terms of rusting it I'd brush it wish a salt water solution and leave it somewhere cool. With nothing protecting it it'll rust pretty quick. Personally though I spiel just let it slowly rust naturally.
If you're mounting on the wall and not using again I'd be tempted to drill bolts into it so you can mount it so it looks like its floating. Is that makes sense?
