Bolt-up hubs are fine in theory. Trials riders use Bolts and female-threaded axles. I have Echo TR trials hubs on my polo bike.
You'll need to add some kind of serrated washer if you want to use them with track ends because if you over-tighten the bolt the thread can change such that the friction when you try to undo the bolt is enough to rotate the axle; in this case you'd have to always undo the sticky bolt first, and tighten the other one first when installing.
Can't comment on the Novatec ones specifically.
