Saarf! Epic projects you have there. I would not have the balls to build those up and ride them, all nos stuff in boxes - wow.
Actually I would build one up and keep another bikes worth of bits hanging on a wall somewhere looking pretty.
I wouldn't worry about the braking surfaces, should last ages if you only do the bits of dry pootling I imagine you would do on such a bike. Use brake pads that are not too abrasive and make sure you do not get any grit embedded in the pads either.
