Sorted it.
Easy GPS didn't seem to want to download. So, for reference (it was actually quite simple in the end);
Upload Courses from Garmin Connect to the Garmin 200
Browse to the Garmin 200 and copy the uploaded courses (.FIT files) to your desktop (probably not even necessary if you can access the 200 directly in the next step)
Go to an online converter (I used GPSies as it was first in the Google search), select the .FIT files (wherever you stored them - see above) and convert to .GPX
Bosh, GPX files will download.
I even uploaded them to mapmyride to check and they seem fine.
