  • Wow. Lardo di Colonnata?

    Usually would say 'want' but having eaten at Brawn on Colombia Rd last night my blood is still 50% pig fat / clarified butter.

  • lardo, aye. melts and adds deliciousness..

  • Went to hawksmoor in spitalfields last night for a burger which was great. Had it with ox cheek that was a bit overpowering, but still very good, 8/10. Best thing though was the 'smashed cucumber'. Peeled cucumber, taken out, with spring onions, roasted garlic, sesame seeds, vinegar and bits of nori. It was absolutely fantastic, and a great fresh compliment to the burger.

    Gonna try and replicate it, I'll post if succeeded.

    Dammit! Just brought back over three kilos of rixones from Galicia...

    Might have to nab some of that shoulder for BBQ samiches anyway...

  • Bought some nice Italian cockles in brine from the deli. Drained the water out of the jar and poured some tabasco in. Now eating them out of the jar with a spoon.

  • Braised flanken style beef short ribs for 6 hours in a slow cooker that have had that Texas brisket rub from Aroogah's link on the last page applied, shred that meat and mix it with some of the reduced cooking liquor and then stuff a burger made of aged Hereford beef with that goodness, griddle that burger, steam that burger under a cloche with some vintage cheddar, apply moar fried short rib mix as a topping. weeping I can't top this.

  • Found a local shop that not only does Rooster Sauce but also does:

    1: Ginger Rooster sause

    1. Extra Garlic Rooster sauce

    2. Hot Chilli Rooster sauce.

  • Love it. I'm gonna give that a go.

  • 3 weeks till America. Riding c 100 miles a day should allow me a 4-5000 extra calorie intake per day. I plan to utilise it fully.

  • Made braised Ox cheek with chorizo last night, got enough to have it again tonight. BOOM.

    Jones the Butcher in Herne Hill/Brixton borders is amazing, got me a couple of fresh ox cheeks. Most butcher's I have asked have told me I have to order a box of 60 frozen ones wholesale. Erm no. If you live in the area and want a particular cut of meat pop in to Jones the Butchers, they are a great bunch of chaps.

    ive been making these banana, coconut, blueberry pancakes for breakfast recently. dont have any gluten or dairy in them.

    then fry them in coconut oil. so damn good

  • My brain didn't know what to make of them, but they were delish. Sharp and sour, creamy, hot, deep fried... it was literally a taste sensation
