    I've noticed that at certain crank o'clocks the chain is looser and is probably why it jumps randomly on uneven ground.

    Also on inspection it would appear my track nuts are made of industrial butter and any attempt to loosen them has nearly rounded them off.

    Your chain ring is not concentric. Some chain rings are just shitty and oval from the start, others just become that way.

    Or it's not centred on the cranks - Some crank arms are shitty & poorly manufactured, others may wear down.

    Go to BLB and ask for some steel chain ring bolts, then loctite them in.

    [Edit] Just realised you said track nuts, not chain ring bolts.
