if you look at some of the more minimal themes quite a lot are made so you can edit easily and it's not that hard anyway, just make it monochrome then delete all the links you don't want/don't fill in the fields for things you don't want
mine is just white with a single post at once (except I have a title and some links at the bottom) and it didn't take long
