I think so, note it will take some time to have these components shipped though.
you could get kinlin rims which are sub380g each, novatec hubs (or rear novatec, and cheap chinese light front hub off ebay with qr) and that would be all in all circa 100 pounds. rest can go towards light spokes and labour, which shouldn't be excessive given you got all the components.
this would be more like 1,4kg rather than 2kg as well - how heavy are you?
