    I'm having a burger-off with some friends. Obv, I want to win.
    Everything is going to be from scratch, apart from the bun/brioche, which I might try and bake, but will most likely buy. I want your tips.

    Plan is:
    to incorp marrow in the patty.
    Home made ketchup and mayo.
    Gem lettuce
    White onion, raw, rings
    Raw slice of tomato - what are the best eating tomatos, beefsteak??
    What cheese?!
    Anything else?
    Unfort, the audience is generic tasters, so should appeal to the masses, to win.

    Use a heavy skillet, add a little clarified butter and then season it like mad with S&P before placing the patty down. Keep the pan relatively dry and keep basting the meat with clarified butter. I also add a little fish sauce to my burger to raise the umamamamamamamamamami levels.
