    I realise that the above question may be an oxymoron.

    You could definitely make a Gumbo completely veggie or vegan, if you just threw in a few more veggies later on and maybe a meat substitute or two instead of the real thing.

    My veggie other half doesn't do spicy so I've never considered it to be honest. As dracula says you could make veggie gumbo but so much cajun food is built around meat with lots of seafood, freshwater fish, chicken & sausages. And it is very, very rich at times and I can't think of many vegetables that can stand up to some of the sauces. I bet you could do a pumpkin or sweet potato etoufee though.
