I've always fancied cooking cajun, but am limited to doing veggie (no fish or seafood) most of the time at home.

Chris, have you got any awesome veggie cajun recipe goodness for me to break my cherry on?

I realise that the above question may be an oxymoron.

You could definitely make a Gumbo completely veggie or vegan, if you just threw in a few more veggies later on and maybe a meat substitute or two instead of the real thing.
