As people are taking music formats, what's the best (i.e. simple, quick) way to convert WAV to MP3 files? I've tried with VLC but managed to cock it up everytime.

It's for ripping CDs, but also comes with a menu option to batch convert a load of WAV files to whatever your chosen compression is (MP3 by default).
Once installed you'll find the option under: Tools > Process WAVs
