The salt draws out the excess water in the oven. I'm not sure you can call it cooked, its more just warmed up. If it starts to cook, it turns to slime. Bloody tricky.

my girlfriend's family make me eat it every summer. Quite like it now, its like really strong anchovy. You have to open it outside though as it attracts all the flies in the neighbourhood.
