Seems like a sensible plan - is the frame spacing the same?
TBH depends on where she is riding, but given most here use one gear I'm not sure many people are going to suggest the need for more gears.
+1 to checkin the ratios.
Also fwiw I've just got a shopper with a 3 speed SA, and its great. #2 pretty much all the time, #1 for an incline or starting from lights, #3 for down hill.
Best bet really is for her to try one and see if it's lacking in range/increments.
