Bonts would work better, are you going for the VR or the compact VR-C version?
On the stem choice, to be honest, I think the cleaner and slightly chunkier looks of the Cinelli look much nicer than the Nitto.
With the old school simplicity of your frame, I think that trying to keep your lines as smooth as possible, giving a simple but elegant build, would look superb!
