Apollo, I don't know what those bars are, but you really want Ergo bars for Ergo levers. Older bars will never get the hoods transition flat while keeping the lever reach correct.
I use Deda Newton bars which suit 90's Ergos and are also light. I'd avoid fanning around with shunning clamps if you can.
I'm sure you know why stem length you want already, but a very vague guess is something like 120mm judging by the frame size which is what made me think the one shown earlier looked awfully short.
