At that weight and with 30mm rims, you could easily go 24h 2x F&R, it's what I've got on my lo pro and I'm way heavier than you. After all, Ellipses are just 30mm rims, and they are as tough as old boots with only 20 spokes, albeit that the spokes are pretty heavy duty.
