Thanks for the recommendations guys. I will definitely be trying out lots of these meals, as they're mostly out of my usual comfort zone, diet wise, which will be exciting :)

Oliver, you can't beat veggie curry.
Loads of easy recipes out there (even the Hairy Bikers are at it: http://www.bbc.co.uk/food/recipes/saag_aloo_with_roasted_95304) and Das Sreedharan (co-owner of Rasa) is a genius: Fresh Flavours of India: Amazon.co.uk: Sivadas Sreedharan, David Loftus: Books
Mr Schick will concur.
Often, if the list of ingredients is daunting, you can just make a load of spice paste/mix and store it somewhere cool for the next time.
Indeed.
As missmouse indicates, the RASA recipes are very simple once you've mastered some basic techniques.
It's a shame the second book isn't available any more, as that was even better.

I've been doing this a lot lately:
1 x chicken breast, butterflied
2 x tablespoons of green pesto, cheap stuff in a jarApply pesto to chicken, slather, season, pan fry, add lemon juice. Even the crispy black burnt bits of basil from the pesto taste lovely with the lemon juice.

I would definitely recommend making your own veg Vietnamese Pho 'style' noodle soups - they are a great, healthy vehicle for a shit load of veg. Middle Eastern recipes as well tend to be light and fresh as well - making things like Baba Ganoush / Tabbouleh / Fatoush are all delicious and full of good stuff!
As an aside - here is a whole plethora of free Ottolenghi recipes - all veggie
