That's the problem, big bikes can look excellent because they're broadly just sized up, so to speak. After a certain point, the geo doesn't change, everything just gets bigger.
Smaller bikes are a pain, because toe overlap and minimal headtube lengths ect ect come in to the equation. I take a 53X53 and I find most production bikes in that size a bit gross. My current Fuji's top tube slopes like a compact, where as the larger sizes do not.

Seatpost is super long to start and you cut down as you need.
Normally they do not do custom however i think if you email the guys at cream bikes & things they may well take measurments off you to do a particular sizing u want but not changing the geo too much.
Oh and regarding past comments about the front looking so slack, it is because the BB is extra high so the down tube has shallow angle.
