Got a bit of an issue with my car.

Passenger footwell is sodden, I lifted the carpet and the padding oozes if I press down on it. I remember seeing some wetness near the sunroof as well, could it be rolling down the inside of the lining?

Can't find any other damp spots

Check the drain holes around the sun roof, they're probably blocked.
