And just use the allen part of single chainring bolts? Of course spacers would work, but would be less pretty.. And heavier of course..;)
Doesn't work like that, the cranks have the 'non-allen' side of the bolts built in and their designed to be used with two rings and a spacer. So even with single rings you need a spacer because the bolt just butts up against the end of the standoff as you can see in this:
