If I just took the dérailleurs and 9 of the sprockets off my 585, it would be under 6kg as a singlespeed with 2 brakes. Very rapidly diminishing returns for your cash after that though, you're probably at the £1 spent per 1g saved level at 6kg, and it just gets worse from there.
