Migas, pauper food of yesteryear. Great with all cuts of meat and also very nice as a vegetarian dish. Pain in the ass to make though. There's so much good food all over Spain it's not even funny. It's perhaps even more varied than Italian and together, for me at least, beat any European cuisine.
