I believe that the chap in the first picture may be doing that deliberately, in the second picture the chap is cornering hard on tarmac in a rally car.

You might want to look at the picture again- the car has just come round the corner at speed and is not understeering despite having only one front wheel on the ground- the picture you are saying shows a lack of road holding is, in fact, showing great road holding.

The chap in the first picture is just trying to deliver a Chippendale dining chair.

The fellow in the second one is just off to have a word with the painter who made his nice beige car in to an orange one, so no wonder he's in a hurry! As for the steering wheel, that's a right hand drive car, but when the rear suspension snapped so did the steering wheel. By an amazing stroke of luck the photographer has just caught the moment that the passenger has caught the wheel.
