You obviously look like you know what you are doing, so probably you've made it this way for a good reason, but shouldn't the outter cable of the rear brake below the seat post run on the non-drive side rather than the drive side as you've done it? Sorry if this has been said before, I mainly come on this thread for the pictures (and so far I enjoyed it a lot!!!) and may have missed possible comments on this...
I understand what has been said about the brooks tape being "shoredich" and all, but having used it in the past (on a completely different bike though) it is really good, ages wonderfully, you can rewrap it almost as often as you need and, like vintage jeans, will look better and better... it will also shrink a bit, and should look less "fat" with time... Maybe I would prefer personnally different bar ends, white or chrome (or posh screw-on alloy ones) rather than the timber/cork ones: you should lose them during your first ride anyway!!
