Probably need closer to 6-8 hrs to render more fat out; they were just too rich even though meat was falling off the bone and juicy.

Chilli chicken and sweetcorn puff pastry pie. Made with stock, a little crème fraîche and some chilli flakes. Had it with peas and garlicky mashed carrots. YUM.

Put a BBQ rub on them and wrapped in cling film in fridge for 6 hours then on a roasting rack over water in a roasting tray sealed with tin foil, last 30 minutes remove tin foil and baste with BBQ sauce twice.

Looks amazing but I know the taste all too well, and what come after..
I stank of meat for weeks, my sweat, my body smell.. my pours were oozing with pork fat. yuck. -

I've stocked up on only vegetables and am doing 2 hours a day on the turbo.

Do this. The recipe's well easy, and the results are delicious and look great.

Traditional fish pie tonight but gonna try and give it an Italian twist... Pancetta, parmesan, garlic, a few cherry tomatoes... This may go horribly wrong... :$
