  • I made (attempted) to make a vegan puff pastry pasty substitute for a friend today- Filled it with leeks, mushrooms and kale, which I'd pre-cooked in some garlic (otherwise the filling is a bit pathetic and leaves a massive gap)
    things I learnt:

    1. It cooks very fast.
    2. It was awesome.

    Neway-
    you make 2 doughs.
    1 is olive oil (75ml), cold water (gradually added in to make correct consistency- which is a hard dough) and about 100g of SR flour.
    the other dough is 125 Plain flour, and cold water (until a similar consistency to the above- firm, elastic and not on your fingers).
    Then take both balls out and mix them together, whilst rolling- Roll and layer, roll and layer, etc.
    Were good. Would make again.
