Would your average mtb be able to run Hookworms 2.5", 65mm Surly large marge rims?
For some reason I think it would be fun to have a random old kona with those Pugsly forks.

Its definitely possible. The fact that the hookworms are basically slicks means it not as big as a 2.5 knobbly. There are plenty of trials rims at around 45mm if your're struggling.
Shiggy (of On-one fame) has a MTN tyre spreadsheet with widths.
The Fatbike forum on MTBR.com has fattyre widths on different rims on the FAQs thread.
There is also a 29er tyre list on the 29er forum of MTBR.
