  • Best melanzane alla parmigiana I've ever made... Slow roasted some baby aubergines 'til they were almost crisps, halved some very ripe plum tomatoes and oven dried those bastards as well... A little bit of Napoli sauce, bocconcini, reggiano, ricotta and some more fried baby aubergine... 45 minutes in a slow oven and BANG!!!! A-ma-zing...
