I used to run two levers and no brakes, they're called hood levers for a reason...
Didn't campag do some "leverless" levers back in the late 80s for such bikes?
Cane Creek do some and I think Tektro might. It looks better when you have the lever there, I often rest my fingers on the lever so removing it would make it uncomfortable.
Basically designed for tandem;
personally I liked having two operable levers, a good idea if you're thinking of adding a rear brakes on the fixie skidder.

It's roughly 3mm of movement at the handlebar grip, so yes, it's a lot, even 3mm total, taking bar flex and stem twist together, feels like a noodle.
There is no way you could twist that stem a couple of degress. If you can. Then I am really sorry.....I mean it.....dont take offence big guy.....I did'nt mean anything by it.....please.
Seriously though. I have had the same thought, but the overall stiffness of going a size down, and adding a cm or 2 of stem. Is increased. Probs a notable amount lighter too.
