  • Has anyone been to one of those Basuba restaurants? I'm being made to go..

    Friday looks decidedly better, Moro for lunch, Negril for dinner.

    Xander what would you recommend? (also you around tomorrow, need to cross your palm with some silver)

    Is that one of those thai places? I quite enjoy them if I am in the mood for a quick padthai (boring i know). I think overall ive always had quite a nice experience there.
    Nothing amazing but I would go back for sure.
    I am very jealous of your friday I must say. Make sure you try the Yogurt Cake and the Cardamon & Rosewater Icecream at moro

    You need to make a simple Pate Brisee but replace the plain flour with bread flour for the gluten, (i'd go half bread, half plain)
    Then for the filling - Chuck steak, Potato, suede and Onion. salt and pepper. cut it into small chunks. Chuck steak is the proper way but skirt, Bavette or even Rump could be used.

    Make the shapes, sling it in the oven at 160 for about an hour and make it all jubbly. oh brush the pastry with egg or sutin so it goes all lovely and golden

    My Gran (Cornish side) used to make it from Ruff Puff.. fucking amazing but heavy and not the proper way, slow cooked ruff puff does that

  • i made a superb risotto last night. alas no pics..
    serves 4

    Arborio rice 400g
    medium onion finely chopped
    salted butter 40g
    glass of white wine
    1 litre of hot chicken stock
    mushrooms 50g chopped
    grated parmesan cheese
    fresh rocket leaves
    freshly ground black pepper

    use a heavy based large saucepan, melt butter with low heat cook onion til transparent, add rice try and coat all the grains by stirring slowly, then add wine wine and ladle of hot chicken stock at regular times so that the rice soaks up the stock properly, add mushrooms keep stirring, add cheese, keep stirring..

    serve with italian meatballs and roasted chestnuts.. add rocket and pepper
    my kids love it.. va buono / thumbs up proper italian nosh

  • I made one tonight. Leek and pancetta, served with baked cod. Really tasty.

  • There was a thing on the Guardian where a chef reckons the quickest he's been able to fry onions for a risotto is 17 minutes.

    Mine usually take about 20.

  • Well I grow my own onions, peel their skin through flattery, bless them individually then convince them to collapse into perfectly chopped pieces with a wave of my hand, before sauteing by proxy.
