I don't get the problem. It's just the same as a hairdresser, personal trainer etc. Work onsite, self employed, work within guidelines and charge customers direct.
There are no employment laws issues as you're not employed by Sargent, if you don't want to follow the shop guidelines then you work somewhere else.
