today is all about the eccles cakes. i have found the most amazing raisins and golden raisins - big as babys thumbs and twice as juicy. plenty left over after the christmas pudding marathon and with the left over puff pastry i made for the beef above its all fallen nicely into place.
i couldn't find any mixed peel so made my own using orange and grapefruit, soaked the fruit in earl grey. should be ready tomorrow
