There is a great sushi place between greenwich and greenwich peninsula.....who'd have thunk it but it is really good.

Are the noodles made of wheat can you get the noodles made of anything else?

Mostly made of wheat, though Soba are made of buckwheat, which isn't actually related to wheat at all and is a plant in the rhubarb family. If you can't eat wheat, you can eat Soba. In Japan there are restaurants that serve exclusively soba, it's difficult to come by here though, especially fresh. You can get dried soba, but they aren't the same IMHO.
