ours were still really fresh (they moved it you touched them, which freaked out Mrs Pun somewhat. I got them out of the shells and then she removed the gills and washed em out. You should certainly give it a go, they make a great simple starter.
delicious and they're great in restaurants when someone else has done all that crap for you as Tenderloin mentioned
