    Stale egg whites don't coagulate around the yolk easily. Fresh do. Fry a fresh egg and watch as the white immediately firms up; fry an old one and watch the white run and whither away.

    Gordon Ramsay used to use the 'fried egg' test for new chefs coming in. He'd ask them to simply fry an egg. You can tell a lot by how someone fries an egg.
