Boiled in water with half an onion and a drip of olive oil, only pre-cook for 15min. Keep the water.
Then chuck it in the oven (220º) for another, say.. 30min, until crispy (skin up most time).
Set aside..
**Noodle Soup **
Cooked noodles aside, fry in a really hot wok oyster or shitake mushrooms, with 1 tbl sp of
Soy sauce, 1 of rice vinegar, diagonal cut baby carrots and a handful of bean sprouts .
All very quickly stirred, add about200ml of the duck water (careful not to put onion in).
It will come to a boil very quickly, then add more boiling water, I'd say 1, 1.5 pints.
To finish it off add a handful of chopped coriander and chopped spring onions.
Serves about 2. I used 2 duck legs.
I like to carve all the meat outta the bone and chuck in to the soup.
