Same as a lot of things in life, really, the journey is better than the destination.
Once you've finished the build you get a momentary sense of achievement, then it's all downhill (first scratch, first p_nctr), best to sell it at once, and start a new project.
I have got round this by never finishing my road bike- there is always a new pair of wheels/chainset/something on the horizon.
