Remember that with pranks, a good prank is measured by whether the person it's played on can laugh about it afterwards along with you. Otherwise, it's just shitty behaviour. OK, you might get someone spectacularly humourless, but perhaps with people like that, finding other ways of trying to get them to lighten up might be a better idea.

you use outlook? email him on behalf of manager/director/ceo (so it looks like it came from their email...) informing him certain aspects of his behaviour in the office/performance has been brought to your attention, you are not happy and want a meeting first thing in the morning at a set time/location.
watch him squirm for rest of day, make odd comment, then next day laugh when he comes to office after time of set meeting...
repeat.

Tape over his mouse sensor.
Take a screenshot of his desktop, move all of the icons off it, then set the screen shot as his wallpaper.
Plugging in an extra mouse is a good one.
All those have been done to death here. Also wireless keyboard instead of mouse. rotating desktops, faked virus alers, lots of rick rolling type stuff "HEY YOU'RE LOOKING AT PORN", etc. Hiding their stuff. Anything you did in primary school works well.
We did a lot of 'sleepers' like opening up computers and leaving pints of milk in them. Taping "I love Westham" on the side of the Chelsea fan's pc. -
