If that's the Cinelli Priest bar, don't trim them, people actually pay £100 for them nowadays.
The Cinelli bar was originally designed for road bicycle with drop bar, and to work with road hood levers, so it's actually perfectly suitable if he wanted a flat bar over a drop.
