I don't think vintage quill stem steel bikes are built to ride fast, but wouldnt the easiest way to drop weight be tubular wheels?

The oldest bike ridden regularly on our Sunday runs is a Vitus. Very light, very beautiful and draws a bigger cafe crowd than the Colnagos (when in France anyway).

Was Fixed Gear, now Single Speed.
I turned the wheel and put freewheel. And a rear brake.

Just a single brake is quite sketchy. You don't get the same control as slowing the rear wheel fixed. All of this assumes your riding it on road at any speed faster than a pram.

cables snap... it has happened to me. Really on a singlespeed like that, there are more arguments for having 2 brakes than against.

I know that a brake on the front and another behind it would be safer.
With just one brake, the rear, the braking behavior is not identical to a Brakeless Fixed Gear? -

way different, for me anyway, when i ride fixed i just have way more control of the wheel when braking

You'll probably be ok slow, in the dry, with your weight back...
But basically yes. It's not like fixed. You can't modulate much so you'll skid, with much less control.

When I restored the bike, it was with the idea of putting Fixed Gear. And so it happened, but, when i ride it, i did not like it.
I like to stop pedaling (right word?), I feel more freedom in a SS.

a single rear brake is slightly better than a single front, but a front and rear is highly recommended, in fact it's a must for a singlespeed bicycle.
it's not a steel bike is it?!
