You'd def want more than 5 gears if you're loading your bike for 2 weeks. 27'' wheelset is a bit of a pain so would change those, but there are loads of decent second hand wheelsets for cheap.
It's as cheap/expensive as you want to make it. I've heard of people touring the world on shitty old 80's mtbs.
